Traditional Handcrafting

Unpeated Scottish malted barley is used to make Glencadam Single Malt Scotch Whisky. The barley is malted to exact specifications and delivered to the distillery every week.

The malted barley delivered to Glencadam is stored in Porteus Malt bins and then milled in Glencadam’s historic Porteus Mill to create grist.

Glencadam’s traditional rake and plough mash tun uses 5 tonne grist batches. The mashing process combines the crushed grist with water of increasingly hotter temperatures at three stages to produce sweet wort.

During distillation, Glencadam’s wash still distils wash into low wines. Low wines then transfer to Glencadam’s wash still for second distillation, which has three stages: Foreshots, Middle Cut and Feints. Stillman carefully selects the Middle Cut to create new make spirit.

Glencadam’s new make spirit is filled into a wide selection of oak casks, which include bourbon, sherry, port, wine and many others. The spirit is left to mature for many years in historical dunnage warehouses built in 1825, which provide perfect maturation conditions.
